For Christmas, we like to switch things up a bit and typically go with a themed meal. It usually involves fresh tamales, enchiladas, and margaritas. Yes, I know it’s not your typical holiday meal, but we have the whole family together around the table.

After prepping for your big meal, you may rely on something quick and easy for dinner. Let me help with these Crunchy Fish Stick Cones made with Gorton’s Seafood fish sticks. I grew up with fish sticks making a regular appearance on the dinner table. With parents attending meetings and all of us kids playing sports, we relied on easy, delicious meals during the week. Your kids/family/guests will love them too. I mean who wouldn’t enjoy eating a meal out of a tortilla cone and if you want to take it one step further, you could always substitute with a real waffle cone.

The recipe in total takes less than 30 minutes from start to finish. That allows extra time to visit with your family and friends during the holidays.

Crunchy Fish Stick Cones

Ingredients

  • 6 tortillas
  • 2 cups tri-color coleslaw
  • 3/4 cup diced mango
  • 18 Gorton's Seafood fish sticks
  • For the Spicy Mayonnaise
  • 1/2 cup mayonnaise
  • 1/4 teaspoon minced garlic
  • 1/8 teaspoon chipotle chile pepper
  • 1/4 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon Tobasco sauce (can substitute with your favorite hot sauce)

Instructions

  1. Preheat oven to 375 degrees F.
  2. Make a cone shape with each tortilla and secure with a toothpick. Place crumpled up foil in the center of the cone to help keep its shape. Place tortillas on a baking sheet and put in the oven for 6 minutes. Flip the tortillas and bake for an additional 4 minutes. Remove from oven and take out the foil.
  3. Preheat oven to 425 degrees F.
  4. Line a baking sheet with fish sticks and place in the oven for 8 minutes. Flip the fish sticks and cook for an additional 3-4 minutes. Remove from oven.
  5. In a small bowl combine coleslaw and mango.
  6. Grab a cone and fill it with fish sticks and coleslaw. Drizzle the spicy mayonnaise on the top and garnish with green onions.
  7. For the Spicy Mayonnaise
  8. In a small bowl combine all of the ingredients for the sauce.  Place in refrigerator until ready to serve.
