It was about 8 o’clock in the morning a couple days ago when I saw that my friend Kristen was enjoying a nice big bowl of ice cream for breakfast. Have I ever had ice cream for breakfast? No, but it sounds damn amazing. It made me think about comfort food and how I could get one step closer to enjoying a dessert for breakfast.

I mean people in Europe have their breakfast delicacy consisting of croissants filled with hazelnut spread to start their morning. Yes, we have chocolate chip muffins but I’m talking about a true dessert to jump-start our day. It could be paired nicely with a chocolate Frappuccino or iced coffee.

To help start the movement I made these Chocolate Streusel Bars and you can bet that I’ll be consuming one or two for breakfast. If your not completely sold on the breakfast idea quite yet, don’t fret because they are perfect as a snack as well. Just remember that to fully enjoy this type of dessert you need to stop what you are doing and take 10 minutes to thoroughly relish it.

Chocolate Streusel Bars

Ingredients

  • 2 cups flour
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup light brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds
  • 1 large egg
  • 1/4 cup vegetable oil
  • 2 tablespoons International Delight Vanilla Iced Coffee
  • 1/4 cup oats
  • 10 ounces semi sweet chocolate baking bar
  • Optional topping: fudge

Instructions

Preheat oven to 350 degrees F.

Combine flour, cinnamon, sugar, baking soda, salt and almond in a large mixer.  Beat in the egg, vegetable oil and iced coffee until well combined.

Line a 8 x 8 baking dish with parchment paper and place the batter into the dish, but reserve 1/3 cup batter.  Press the batter down firmly so you have a thin even layer.  Bake in the oven for 12 minutes.

Remove and top with chocolate bar and then crumble the remaining batter over the top and slightly press it down.

Place it back in the oven for 16-18 minutes or until lightly brown.

Allow to cool before cutting.  Drizzle with additional fudge if needed.
