Chimichurri Chopped Salad

A couple of weeks ago we got to experience the newly revamped dining menu at Ruby Tequilas here in Lubbock. We’ve dined here several times since we moved back to Lubbock, but I was excited to share it with my readers as well. In fact, I hosted my 21st birthday party at the same Ruby Tequilas that we attended for our date night.

When you first walk in you will be met with colorful walls, a glass bottle chandelier and Mexican inspired décor. Along the walls, you will see quotes from Ruby herself to display her mannerisms in life.

  • Speak softly and carry a fat tamale.
  • Live life in the fast lane, but drink a margarita slowly.
  • If the tortilla fits, eat it.
  • It’s not a party until the old Mexican shows up.

There are several new menu items that diners can check out. One of the things that I love is that they concentrate on fresh food and ingredients and I can’t typically walk away from a restaurant that makes their own tortillas.

We decided to try out some of the new items that they now serve. For dinner we started off with a Mex-Tex Mule, taquitos and of course chips and salsa.  Our dinner entrees were up next with Shaun choosing the Guisada Rojo and I went with the Chimichurri Chopped Salad because I knew I wanted dessert so I had to save some room for that too.

Our date night wouldn’t be complete without dessert so we tried some of their Fried Ice Cream.  It had been way too long since I’ve had any type of fried dessert and it was one way to end a delicious meal.

New Menu Items:

  • Sweet Heat Valentina Salad
  • Chimichurri Chopped Salad
  • Guisada Rojo
  • Cod Del Mar

The Cod Del Mar looks just as good and I almost went with that choice but ultimately decided on the salad. I adapted this recipe for my own version to showcase below but feel free to add pickled red onions if you’d like. I didn’t have the time to make my own but they really make a great addition to the salad.

I have to say, Ruby Tequila’s has done an excellent job on revamping their menu and it’s a guarantee that I will return to any Mexican restaurant if they make their own tortillas and the chips and salsa are on point.

Chimichurri Chopped Salad

Chimichurri Chopped Salad

Ingredients:

For the Salad

  • 8 ounces green lettuce blend
  • 1/4 cup black beans, drained and rinsed
  • 1/4 cup jicama slices
  • 1 medium tomato, cut into wedges
  • 3/4 cup shredded monterey jack cheese
  • 2 cups cooked beef fajita meat
  • 3 strips of cooked bacon, chopped

For the Chimichurri Dressing

  • 1/2 cup light sour cream
  • 1/4 teaspoon minced garlic
  • 1/3 cup parsley
  • 1/3 cup cilantro
  • 3 tablespoon extra virgin olive oil
  • juice from a lime wedge
  • salt to taste

Directions:

For the Salad

Place greens into a bowl or large plate.  Top or toss in the rest of the ingredients. Serve with dressing.

For the Chimichurri Dressing

In a food processor combine all of the ingredients.  Blend until almost smooth consistency. Serve with salad.
