I’m about to admit a HUGE weakness of mine and its the Chicken Salad Sandwich. I can’t get enough of this stuff. I’m picky about it too like I am my tortillas. I prefer not to have nuts or fruits in at as well. Just a good ole’ plain chicken salad sandwich without the extra fluff.
This recipe is a old one that I am bringing back because I can’t get enough of it. Also, it was time to redo the photo because you couldn’t really tell what type of sandwich it was. (Oops) My mom used to make large batches of this chicken salad and we or I should say “I” would eat it all up. I remember asking her about the crunch and she told me it was water chestnuts. Now the only other time I eat these chestnuts is when I’m consuming Chinese food. I love the crunch that they add and who would have thought to add them to this classic dish.
Now I’m not afraid to admit that I really DISLIKE mayonnaise.
I don’t like to touch it, I don’t like to smell it and I don’t like it in my food. However I only make the exception for it in my chicken salad. I “pretend” that its not really in the dish.
What is your one type of food that you can’t stand?
Chop all vegetables and place in large bowl.
Cut chicken into small chunks/or finer. Add the chicken and mayonnaise to the large bowl and stir.
Add the salt and pepper and then cover with saran wrap and refrigerate for at least 1 hour.

Chicken salad is something I’m picky about too – and for me it MUST be on a croissant! This looks like a winner in my book!

I really dislike mayonnaise, too! I’m always grossed out at sandwich shops when they ask if I want mayo on my chicken salad or egg salad sandwich…isn’t it already *made* with mayo?! This sandwich looks super tasty – I never would have thought of using water chestnuts!
Oh man totally forgot to write about the extra mayo in the post. I agree why would you want more when it’s already added in the mix. The worst part is when you can see it oozing on the bread.
I’m not a huge fan of mayo, but I do love a good chicken salad! I can’t stand mushrooms. The texture really bothers me. I’m not a picky eater at all, but I won’t touch any dish that has mushrooms in it.

Ever tried using Greek yogurt instead of Mayo?
I just made this today. I grabbed my mayo from the fridge and opened it only to find that it was ROTTEN! Gross. We don’t use it hardly EVER. So I made from mayo from scratch. Very yummy. This is delicious. I later added some curry powder to it and it was super yummy that way too. I will definitely make this again.

finally found it,, leaving the chestnuts out,, but this is perfect, i am picking up croissants after work, and making this.
This sounds like a recipe my husband would love. He is a big fan of chicken salad…me not so much. I will have to try this out for him!
Megan this sounds awesome but there is a way around the mayonnaise and that theory is Campbell’s condensed cream of chicken soup. Try it . It’s awesome!
