Chicken Broccoli Slaw

It is Hot! Like go outside and you immediately start to sweat and your makeup is running off and your clothes are clinging to your body and you just want to scream I need AIR. I might be exaggerating this just a bit but I’m apparently not coping well with this type of weather.

I woke up Saturday and decided to take Olivia on a little stroll through our neighborhood. In my mind it shouldn’t be quite that hot out because it was 9am in the morning. WRONG! It was blazing hot outside and it probably didn’t help that I was wearing black pants to hide my pale looking legs. As I was rounding the corner in the last home stretch I wanted to run home so badly with the stroller but knew that if I ran to the AC I would surely pass out.

I’ve always been a big fan of water and after that gruesome unpleasant walk I drank about 3 full glasses and made sure I loaded Olivia up as well. For lunch I was thinking about grilling out for the two of us but that idea was quickly shot down with the rising temperatures. Instead I decided to whip up this chicken broccoli slaw with some items I had in the refrigerator. Best of all it was a COLD dish that I thoroughly enjoyed in my AC.

Chicken Broccoli Slaw

Prep Time: 20 minutes
Total Time: 20 minutes

Ingredients

  • 1 rotisserie chicken, shredded into pieces
  • 2 cups broccoli coleslaw
  • 3/4 – 1 cup cilantro creamy dressing
  • 3/4 cup cherry sweet tomatoes, cut into 4 halves
  • 1/3 cup pecans, chopped
  • salt and pepper to taste

Instructions

Remove the skin from the chicken and shred it with your hands and place in a bowl. Add the slaw, cilantro sauce, tomatoes and pecans. Mix and if you want more dressing add the last 1/4 cup.

Season with salt and pepper.

*Eat alone, on top of greens or in a sandwich.*
