  Today I have a special guest post from one of my co-workers, Corey! He has been wanting to do a guest post ever since he found out that I had a food blog. He has made these chicken and waffles for our office and they are great!

A Southern Recipe for a Southern Girl.

I have had the pleasure of meeting a strong, beautiful and ever so precious woman, Betty Schaffner  (Don’t worry Meagan you are not far from the tree). Although I only had the honor of meeting her several times, her presence and kindness leaves an everlasting impression. She is a person that welcomes you with open arms and makes you feel that you are part of the family. This is truly rare these days, but then again she is one of a kind. Any person that prepares several weeks’ worth of meals for her significant other, because she will be in the big city receiving cancer treatment is definitely ONE of A KIND!

If I am able to pass along to my daughter the strength, perseverance, and love for others (let’s not forget cooking) as Betty Schaffner has to her daughters I have done my job as a parent. It is people like her that make the Angels up in Heaven sing. It is because of this reason I convinced Meagan (this was not an easy task) to take a chance on a rookie blogger. I figured if there were anything that I could do to allow Meagan to spend time with her mother this was it. In fact, Meagan’s mother is the reason I wanted to cook the Southern Style Waffles and Chicken. I mentioned to her the last time we spoke I would make some for her. So, Mrs. Schaffner when you are done kicking Cancers butt I will have a plate waiting for you.

Chicken and Waffles

Ingredients

  • 3-4 lbs. Pre-cut Chicken legs and wings
  • Vegetable Oil
  • For Dipping
  • 3 eggs
  • 1/2 cup of buttermilk
  • For Coating
  • 1 Ziplock Plastic Bag (Large)
  • 1 cup all-purpose flour
  • 2 cups of Bisquick mix
  • House Season
  • 1 Tablespoon Slap Ya Mama Season
  • 1 Tablespoon Zatarain’s Creole Seasoning
  • 1 Tablespoon Garlic Powder
  • Salt and Pepper (to Taste)
  • For The Waffles
  • 2 Cups of Bisquick mix
  • 1 1/3 cups of milk
  • 2 Tbsp vegetable oil
  • 1 egg

Instructions

For the Chicken
Put the All Purpose flour and Bisquick mix in the Ziplock plastic bag. Season the flour with the House season.
Pour the oil in a large skillet until it is 1/3 to 1/2 full. Heat the vegetable oil to 350 degrees.
Place the eggs and the butter milk in a bowl and slightly stir. Dip the chicken pieces in the bowl, a few at a time, place them in the Ziplock bag, seal the bag and shake to coat.
Carefully place the chicken in hot oil for about 5 minutes per side, or until chicken is cooked through or juices run clear (Poking the chicken with a fork helps the inside cook a little faster).

For The Waffles
Follow the cooking directions on the box.
