If you follow me on Instagram you would have noticed that I was vacationing in Santa Fe, NM for an EARLY anniversary trip with my hubby. We had an amazing trip allowing us to eat, shop and site see through the gorgeous artsy town. Typically when I get home from a trip its after dinner or we pick something up so we don’t have to worry about dishes or cleaning up a mess. We arrived home pretty early in the afternoon so I knew dinner would be up to me.

I’m not embarrassed to admit that I had my fair share of hamburger helper dinners while growing up. My parents would leave for a function and my sister and I would be in charge of dinner. If it was up to my sister to make dinner you could count on hamburger helper or her taco salad recipe. I’m almost 30 years old and I haven’t had hamburger helper in over 15 years and I can’t say I miss it all that much. This cheeseburger gnocchi recipe reminds me of the simplicity of those dinners along with the cheeseburger and pasta twist.

The best part about a quick dinner is that I had all of the ingredients except for the beef. Quick store trip and 20 minutes later dinner was served for our family and it didn’t come from a box. I even had the time to take and edit photos, so that I could spend more quality time with the little one before bedtime.

Cheeseburger gnocchi

Yield: 4-6 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes

Ingredients

  • 1 pound 93/7 lean ground beef
  • 1 tablespoon worcestershire sauce
  • 3.4 cup diced onion
  • 2/3 cup chopped mushrooms
  • 1/4 teaspoon salt
  • 10 ounce can rotel mild diced tomatoes and green chilies, drained
  • 2/3 cup light sour cream
  • 1 pound potato gnocchi
  • 1 cup shredded cheddar cheese
  • 3/4 cup shredded mozzarella cheese
  • basil leaves for topping

Instructions

  1. Add meat to a skillet over medium heat.  Pour in the worcestershire sauce and cook until brown.
  2. Add onions and mushrooms to the meat along with salt and tomatoes.  Continue to cook for 5 minutes.
  3. Stir in sour cream and then drain the pan if any juices are still in it.
  4. Cook the gnocchi according to package instructions and then place in empty skillet while meat and vegetables are being drained.
  5. Toast the gnocchi in pan for 3-4 minutes on medium heat.
  6. Pour in the meat mixture and stir in the cheddar cheese.
  7. Top with mozzarella cheese and place under oven broiler for 45 seconds or until cheese has melted.
  8. Top with basil leaves.
