Burrata pesto burger

Occasionally I like to take a stroll through my category archives to see what I can remake or adapt.  I happened to search for burgers this past week and I can count on one hand how many I have blogged about.  Thats pathetic because I absolutely love burgers and I eat and cook them ALL THE TIME.  Not sure how this happened in the almost 4 years of blogging but I am saddened by this category.

Today I am making it up to you with this burrata pesto burger.  Grab a napkin or roll of paper towels because you will be two fisting this burger for sure.  I’m in a burrata and pesto kick these days so you never know what may come from my kitchen with these two ingredients.  Unfortunately I’m out of burrata but I have a family member bringing me more cheese in a couple of days.  Yes, I can’t find it in my hometown but I’m hoping to change that soon.  Now back to this flavorful mind blowing burger.

Instead of using beef for this burger I used ground chicken and incorporated the pesto into the meat.  Some may say its a sandwich but I’m sticking with a chicken burger.  In fact I might step out on a limb and say its one of the best burgers I’ve made in a while.  That says a lot when you are making them at least every other week.  After the meat is mixed up you need to work on your buns.  Well you might need to work on other buns after eating this but I’m talking about the whole wheat buns in the picture above.  I highly and will ALWAYS recommend toasting your buns before serving up a burger.  I can’t reiterate enough on how a soggy burger or sandwich can ruin your whole experience.  Top it off with a simple guacamole and a good helping of burrata cheese.  I promise you will be licking your fingers, hands and plate while eating this burger.

Burrata pesto burger


    • 1 pound ground chicken
    • 1/2 teaspoon salt plus pinch of salt, divided
    • 2 tablespoons pesto
    • 1 teaspoon balsamic vinegar
    • 4-6 ounces barrata cheese
    • 2 avocados, mashed
    • juice from 1/2 lime
    • 1/2 large tomato, sliced
    • 3 whole wheat hamburger buns


  1. In a bowl combine chicken, 1/2 teaspoon salt, pesto and balsamic vinegar.
  2. Using a large spoon or scoop add patties to a medium size non-stick skillet over medium heat.  If using a small ice cream scoop add 2-3 scoops per patty.
  3. Cook for 7-8 minutes per side.
  4. While meat is cooking add mashed avocado to a bowl.  Stir in lime juice and pinch of salt and set aside.
  5. Prepare buns and top with chicken patty, slice of tomato, 2-3 scoops of guacamole and burrata cheese.

  2. Oh my!! I’m actually leaning more toward chicken burgers this year than I ever have. But I’m totally failing in the toppings department — I think I’ve prevail though if I make these!!
