I love a good party. Maybe I should say I love a good gathering where there is lots of good food, drinks and of course great conversations with the people I love. Now that school is out more and more people will be gathering their families for get togethers and I’m all for that. In fact I plan on hosting several of these parties this summer myself.

With every good party comes lots of planning to make sure your guests receive their fill and leave with full bellies and hurting cheeks from tons of laughter.

Today, I’m kicking off my party with these Buffalo Chicken Salad Bites made with Athens Mini Fillo Shells. Now one of my favorite things to make is chicken salad. It’s easy and you can usually feed a lot of people with just one batch. In my case that means lots of leftovers for our tiny family of three.

Buffalo Chicken Salad Bites

I decided to tweak that Chicken Salad recipe to make this 5 Ingredient Buffalo Chicken Salad Bites. Your guests will love the little spice with each bite and will be begging for more of these appetizers. The best part is that it only takes about 15 minutes from start to finish to prep everything. That means you get more time with your guests until you start to prep the next meal. I also like to get them involved in the kitchen (and no I don’t mean cleaning it) by getting them to help prep and serve. They are more likely to feel included instead of just sitting down watching the TV. I have found that more and more people want to help and if they don’t by all means hand them a drink and let them just join in on the conversation.

Buffalo Chicken Salad Bites

5 Ingredient Buffalo Chicken Salad Bites

Yield: 30 appetizers

Ingredients

  • 1 ½ cups chopped rotisserie chicken
  • 1/3 cup diced celery
  • 3 tablespoons buffalo wing sauce
  • ¼ cup plain yogurt
  • 30 Athens Mini Fillo Shells

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a bowl combine the first four ingredients and mix well. Place in the refrigerator until ready to use.
  3. Line a baking sheet with the Athens Mini Fillo Shells and bake in the oven for 4 minutes and then allow to cool for 3 minutes.
  4. Using a small scoop or spoon fill the shells with the buffalo chicken salad mixture.

Notes: Best to serve right away while salad is cold and shells are warm.
