I’m a firm believer that brussels sprouts paired with bacon is one combo that should never be broken up. You have brussels sprout fans and then people who either dislike them or are afraid to try them out. If it’s your first time to try out these greens PAIR them with bacon. In fact just go ahead and make these Brussels Sprouts Bacon Bites with Aioli and see if you can stop eating them.

One of the many reasons that I love these Brussels Sprouts Bacon Bites is that they are low carb/keto friendly on my new diet change. I can break these out as appetizers for the holidays and snack away guilt free. If you want to watch your calorie intake, substitute with turkey bacon.

To start these bites, you will need Pompeian’s Organic Extra Virgin Olive Oil to splash in the pan for the brussels sprouts to saute in. I almost forgot to mention the addition of grated parmesan cheese to the recipe. Don’t skip this IMPORTANT step. Wrap the bites in bacon and pop them in the oven. While they are baking, you can make the aioli sauce. I’m not a huge fan of mayonnaise, but in this sauce it’s incredible.

Brussels Sprouts Bacon Bites with Aioli

Brussels Sprouts Bacon Bites with Aioli

Prep Time: 10 minutes
Cook Time: 22 minutes
Total Time: 32 minutes

Ingredients

  • 1 tablespoon Pompeian's Organic Extra Virgin Olive Oil
  • 10 brussels sprouts, halved
  • pinch of salt
  • 2 teaspoons grated parmesan cheese
  • 6 slices of bacon
  • 1/2  cup mayonnaise
  • 1/8 teaspoon chile pepper
  • 1/4 teaspoon freshly squeezed lemon juice
  • 1/4 teaspoon minced garlic
  • 1/2 teaspoon Tobasco sauce

Instructions

Pour olive oil into a skillet over medium heat. Add in the brussels sprouts and saute for 5 minutes. Sprinkle in the cheese and cook for an additional minute. Remove from heat. Cut each bacon slice into thirds. Place a piece of the brussels sprout underneath the bacon and wrap it up. You may need to secure it with a toothpick. Place it seam side down on baking sheet. Repeat until all bacon and brussels sprouts have been used. Bake in the oven for 22 minutes or until bacon is done. For the Aioli Sauce In a small bowl combine all of the ingredients for the aioli sauce.  Place in refrigerator until ready to serve.
