Every once in a while I venture out for a girl’s only night. It usually entails wine drinking, appetizers, lots of food and of course good girl time. This past week since we had company in town we decided to do a girls only family night at a local restaurant. We sat down and immediately ordered drinks for the table along with queso, crab cakes and mango-crab nachos.

It was my first time eating this memorable brie queso. So when I needed a dip to go along with these new Simply 7 snacks that I received I immediately thought back to that dip.

Now I’m the type of person who sees new chips at the grocery store and has to at least try them out. Simply 7 arrived at my local store a couple months back and I immediately wanted to taste these delicious looking chips. Of course I loved them and when they asked to work with me I knew I couldn’t turn them down.

Simply 7 is about simple snacking with simple ingredients. They make a healthier snack alternative (chips) that are non-GMO, gluten free and contain no MSG. It’s about knowing what you are eating and you can actually pronounce the ingredients in the product. The different products that they offer are hummus, lentil and quinoa chips and each product consists of different flavors.

My family’s favorites are the cheddar quinoa chips and the tomato basil hummus chips. However for this brie queso I decided to use the sea salt quinoa chips so the flavoring wouldn’t over power the dip.

Ingredients

  • 8 ounces of brie cheese, rind removed
  • 3 tablespoons 2% milk
  • 2 tablespoons mild rotel tomatoes
  • 1 piece baked bacon, chopped

Instructions

Place brie in a small skillet over medium heat.  Let the cheese melt and then stir in the milk and rotel tomatoes.  Keep stirring until cheese has completely melted.

Top with chopped bacon.
