Coming back from Disney World and staying at Animal Kingdom lodge left me with a craving for all kinds of spices and ethnic dishes. Our resort had a couple of different dining options, one of which was named Boma, where we had the opportunity to dine at twice during our stay. It offered a large buffet filled with African dishes that range from fish, meat, soups/stews, salads, rice and desserts. Going down the buffet line, I noticed lots of the dishes contained the spice turmeric. A spice that is kept in my pantry, but never really sees the light of day to be added to any of my recipes. Maybe I was scared to use it or unaware of what I wanted to pair it with.

Now that I’m back home I’ve brought out the turmeric and made this Baked Honey Cilantro Turmeric Chicken. The first recipe incorporated coconut milk with the turmeric but it didn’t stay on the chicken drumsticks like I had intended it to. I needed something thicker that would coat the chicken and go along with the cilantro and turmeric for my African inspired meal.

If you like tackling new foods or trying out new flavors, I highly recommend this turmeric chicken. It may take a few tries before the kids get past the yellow colored chicken but hopefully they will love the flavor profile some day. This dish is perfect with coconut rice and warm naan bread. If you are looking for more inspiration you can try this carrot bredie. One of my favorite restaurants outside of Houston was called Peli Peli and they served African inspired dishes. I fell in love with this carrot bredie dish.

Baked Honey Cilantro Turmeric Chicken

Baked Honey Cilantro Turmeric Chicken

Yield: 7-8 drumsticks
Prep Time: 5 minutes
Cook Time: 50 minutes
Total Time: 55 minutes

Ingredients

  • 1/3 cup honey
  • 2 teaspoons turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon minced garlic
  • 1 tablespoon finely chopped cilantro
  • 7-8 large chicken drumsticks
  • salt to season

Instructions

Preheat oven to 400 degrees F.

In a bowl whisk together the honey, turmeric, cumin, garlic and cilantro. Lay the chicken out on a foil lined baking sheet. Pat the chicken dry with paper towels. Then use a pastry brush to spread out the honey turmeric mixture over the whole chicken drumstick. Repeat until all chicken has been coated. Season with salt.

Bake in the oven for 40 minutes covered. Remove chicken and brush with any remaining mixture and place back in the oven uncovered for 10 minutes. (Cooking times may vary)
