A couple weeks ago I talked my husband into letting me take a cruise with 50 other fabulous bloggers for a photography conference. I’d like to say this is “work” but being on a cruise with camera in hand is more like my happy place. The best part is Royal Caribbean is our sponsor, so they are ALREADY treating us like royalty and the cruise doesn’t take place until January.

With the cruise approaching I think beach bodies are on everyone’s mind. I mean we are taking a cruise during winter but will be traveling to beach destinations with CAMERAS.

Baked crab wontons

It’s salads, baked foods and NO fried foods. Yea right whom am I kidding? Whenever I start a diet it lasts just a couple of weeks but I’m going to try really hard to throw good meals in every once in a while.

Today I’m starting off with these easy baked crab wontons. I LOVE LOVE LOVE crab wontons so baking them just made them so much better instead of frying them up. Plus its one step closer to getting a beach body by January.

Yield: 20+ wontons
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes

Ingredients

  • 1 pound crab claw meat
  • 10 ounces Philadelphia 1/3 less fat cream cheese, softened
  • 1/2 cup diced yellow bell pepper
  • 1/4 cup green onions sliced
  • 2 pinches of salt
  • 20+ square wonton wrappers
  • 1 egg white
  • cooking spray

Instructions

Preheat oven to 400 degrees F.

In a bowl combine the first 5 ingredients.  Lay out the wonton wrapper and place some filling in the center.  Brush egg white wash around all edges of the wonton wrapper. Fold the wrapper into a triangle shape.  Spray each wonton wrapper with cooking spray.

Bake in the oven for 10-12 minutes.
