I’m off to sunny California today for a weekend with other food bloggers in Temecula. It will be my first time attending this Big Traveling Potluck but I’m pretty dang excited because I’m meeting up with some of my favorite food blogging friends. This week has been a bit hectic for me with planning and prepping for trip plus leaving Olivia. My husband is going on an annual motorcycle ride in the hill country so he won’t be around either. I know she will be in great hands but I can still worry right?
Well dinner has been interesting for us lately because I’ve been making an array of things for the blog and for freelance work. It seems that nothing paired together and we were just having a buffet of total random dishes. I finally put one meal together that didn’t need to be paired with anything else except maybe a glass of wine. (Hint, hint)
This dinner was easy to whip together and I even had time for photos without a starving husband and toddler. Oh the joys of photographing food during meal times. Have a good weekend!

Twenty Minute Spinach Gnocchi Sausage
Yield: 3-4 servings
Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
1 teaspoon olive oil
3 cups gnocchi
1/2 cup tomato sauce
3 cups spinach
1 1/2 cups sliced italian sausage
1/4 cup shredded parmesan cheese
salt for seasoning
Cook gnocchi according to package instructions and then remove.
Add olive oil to a large sauté pan over medium heat. Add sausage slices and cook until brown. Add the spinach and gnocchi to the pan. Cook for an additional 5 minutes.
Pour in the tomato sauce and cook for 1-2 minutes. Season the gnocchi and sausage with salt before plating.
Top with parmesan cheese.
