Ever since I could remember my family would get together at my Grandpa’s house and make sausage. Everyone got put to work and it didn’t matter your age. Now, my immediate family gets together at my parents house every year around New Years to continue the family tradition. I’m talking like 300 lbs of link and patty sausage!
Unfortunately, this year Shaun and I missed out due to me being on call for work over New Years. Right now I am having to wait a couple of months until I see my parents so that they can bring us our sausage. Due to this misfortune, I am having to experiment in making our own breakfast patties. I also LOVE the frozen Southern Style biscuits that you can get at the grocery store to make the perfect sausage biscuit.
In one of the pictures below you will notice a tiny piece being cooked. You may ask what in the world is she doing!?! By doing this you will be able to taste test a little piece at a time until the flavor satisfies you. You may need to adjust the spices according to your liking.

Ingredients:
1 lb. ground turkey 93/7
1/4 tsp mustard seed
1/4 tsp ground thyme
1/2 tsp ground sage
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper flakes
1/4 tsp garlic powder
Preparation:
In large bowl mix all of the above ingredients except for the turkey. Add the seasonings to the turkey and mix well with your hands.
Heat a sauce pan over medium/high heat adding a little olive oil to coat. Form seven small sausage balls and flatten a little then add to the pan. Cook 10-12 minutes on each side or until internal temperature reaches 165 degrees.
