This is basically a play on from a Caprese salad.  I received the recipe from a family friend this summer and it just goes perfect as a side.  ENJOY!
Ingredients:
2 cups Cherry Tomatoes (keep whole or cut in half)

1 cup Fresh Mozzarella Cheese (cherry size)
1-2 Tablespoons of capers
1/2 cup diced purple onion
2 teaspoons of basil
3/4 cup of “Ken’s” Balsamic and basil vinaigrette
salt and pepper to taste

Preparation:
Mix all ingredients and set in refrigerator at least for 30 mins to marinate and coat everything.
To plate you can scoop and leave some of the dressing in the container

    I love just about anything involving mozzarella. These kinds of salads are also great served with some nice Italian bread to dip into the dressing.
