Dinner time is gathering around the table to enjoy a freshly, hot meal. The table is set, the drinks are ready and the bread is broken. If only that happened every single night. I’m lucky if we sit down and everyone has a drink. With a new baby in tow, dinner time sometimes gets pushed back and the other kids are starving. That’s where pre-dinner snacking comes into play.

Lately, we’ve been snacking on hummus paired with bell pepper, carrots, cucumbers and cheese. A healthy snack before dinner never hurt and it’s a great way to get the kids to eat their daily amount of vegetables.

This past week I was on a Southwestern kick with 4 out of the 7 nights being Mexican food. I mean it is my favorite. I decided to bring out Sabra’s Classic Hummus and some of my favorite toppings to complete the easy dip. That’s where you end up with this fun, Mexican-inspired Tex-Mex Hummus dip. This past year when I was at Sabra’s headquarters we had a competition to create our own flavor. Well, you probably guessed by now that I went with this Tex-Mex Hummus dish. I’m still secretly hoping that they will have a Tex-Mex version in the near future but until then I will stick with my own version.

The next time you are planning a fajita night or having your best girlfriends over for margaritas. Break out this Tex-Mex Hummus for some awesome and healthy pre-dinner snacking.

Tex Mex Hummus

Tex-Mex Hummus

Prep Time: 5 minutes
Cook Time: 7 minutes
Total Time: 12 minutes

Ingredients

  • 1 1/2 teaspoons extra virgin olive oil
  • 2 tablespoons whole kernel corn
  • ¼ cup diced green or red bell pepper
  • pinch of ground cumin
  • 1/8 teaspoon ancho chile powder, plus extra for garnishing
  • 2 tablespoons chopped cilantro
  • 1 tablespoon finely chopped jalapeno, deseeded and deveined
  • 1 teaspoon lime juice
  • salt to taste
  • 1 (10 ounce) container Sabra Classic Hummus

Instructions

  1. Add olive oil to a skillet over medium heat. Place the corn and bell pepper into the skillet and sauté for 4 minutes. Sprinkle the seasonings into the pan and stir well. Sauté for an additional 3 minutes and then remove from heat and place into a small bowl.
  2. Add cilantro, jalapeno, lime juice and salt to the bowl and stir. Place in the center of the hummus container or stir it in. Sprinkle a little extra ancho chile powder for a garnish.
