Ok, I know what typically goes into a tater tot casserole, but why not be a little different and make a side dish without using any meat.

Sometimes it’s okay to break away from the standard and create something new and exciting.  Recipes fit into that category as well.

When Shaun and I made our first trek to Trader Joe’s two weekends ago we stocked up on all sorts of goodies. One of these goodies consisted of a large frozen bag of tater tots. My first thought was to make this recipe using beef or turkey but after consulting with Shaun I decided to stay meat free.

I usually don’t stray away from meat but when making this new side dish I decided that was going to be my route.

It’s cheesy!
It’s gooey!
It’s delicious!

Tater Tot Casserole

Tater Tot Casserole

Yield: 5-6 servings

Ingredients

  • 1 Tbsp of Hidden Valley Buttermilk Ranch Package
  • 2 Tbsp light sour cream
  • 1/2 cup Monterey Jack Cheese, shredded
  • 1/2 cup Mild Cheddar Cheese, shredded
  • 1 10 3/4oz. can cream of mushroom soup
  • 1/2 tsp pepper
  • 1/2 tsp parsley flakes
  • 4 1/2 cups frozen tater tots

Instructions

In a large bowl combine all of the ingredients except for the tater tots.
Mix everything so that its creamy.
Add tater tots 1 cup at a time to the bowl.
Stir until all tater tots are well coated.
Place in a greased baking dish and cover with saran wrap.
Place in refrigerator overnight or at least 6-8 hours.
Preheat oven to 350 degrees and bake for 40 minutes.
