Patience?!? Something that I apparently need to work on.
This past weekend my husband was gone to a bachelor party for his twin brother. I was left at home while I was on-call for work. Don’t worry I can be on call at home…. The one thing that I wanted more than anything this weekend was to see the Hunger Games Movie.
I even briefly considered going to the movie theater by myself to watch it. Who am I kidding I HATE eating lunch alone at a restaurant so there is no way I would go see a movie. So, I holed myself up at the house with the dogs and finished two books.
I knew Shaun would be coming back sometime today, so I basically BEGGED and PLEADED for him to take me to see the movie. Guess what!!! Even though he was exhausted he knew how badly I wanted to see this movie that he sucked it up and took me. I really am a lucky girl/wife.
While at home this past weekend I decided to make this taco pizza. There are so many different flavors going on with this pizza but it is FANTASTIC.
Yield: 2 large loaves
1 ciabatta loaf
1.25 lbs. Jenni-O Taco Seasoned Ground Turkey
1 cup black beans, drained
1 cup mild cheddar cheese, shredded
1 1/2 cups colby jack cheese, shredded
1/4 cup black olives, chopped
1 large tomato, chopped
Preheat oven to 325.
Heat large skillet over med/high and add ground turkey. Cook until brown and add the black beans. Spinkle with some salt. Remove from heat and stir in cheddar cheese and 1/2 cup of the colby jack cheese.
Cut the loaf in half and brush with olive oil. Place meat and cheese on top of the bread loaves. Cook for 10 minutes. Remove and place 1/2 cup of the colby jack on each loaf and place back in oven for 5 minutes. Remove and let it cool for a couple of minutes.
Top with black olives, tomatoes, and avocado.
Optional: crushed red pepper and dipping sauces like salsa and ranch dressing
