Stuffed Sugar Cookie

 
Lately, I have seen several recipes from fellow bloggers who have made stuffed cupcakes and cookies. Anything you can imagine has probably been done. I wanted to make something that would be different and delicious. I happened to have some rolos left over in my pantry and knew that maybe I could use them to stuff in the cookie. I love how the cookie still comes out flat and you would have no idea that something is in the middle until you bite down. ENJOY!!

Stuffed Sugar Cookie

Ingredients

  • 2 3/4 cups all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup unsalted butter, melted
  • 1 1/2 cups sugar
  • 1 egg
  • 1 tsp vanilla
  • 3 Tbsp buttermilk
  • 1 package rolos

Instructions

Preheat oven to 375 degrees
In a small bowl combine the first three ingredients and mix
In a large bowl combine the butter and sugar and whisk until creamy about 5 minutes
Beat the egg into the sugar/butter and then add vanilla and stir
Gradually add the dry ingredient mixture and then the buttermilk
Scoop up the dough mixture with an ice cream scoop or spoon and take that mixture and half it
Flatten both of the pieces and place one rolo (or any other candy) onto one piece and place the other flattened piece on top
Grab the two pieces and roll to make a ball covering the rolo
Place on ungreased baking sheet and cook 9-11 minutes or until lightly brown
