Preheat oven to 375 degrees
In a small bowl combine the first three ingredients and mix
In a large bowl combine the butter and sugar and whisk until creamy about 5 minutes
Beat the egg into the sugar/butter and then add vanilla and stir
Gradually add the dry ingredient mixture and then the buttermilk
Scoop up the dough mixture with an ice cream scoop or spoon and take that mixture and half it
Flatten both of the pieces and place one rolo (or any other candy) onto one piece and place the other flattened piece on top
Grab the two pieces and roll to make a ball covering the rolo
Place on ungreased baking sheet and cook 9-11 minutes or until lightly brown

What a fantastic idea. I am normally not a fan of sugar cookies, I find them to be dry. A Rolo inside would make them wonderful.

Stuffed cookies are a nice break from the cupcake craze. I’m always trying to figure out what I can drop into brownie batter to kick them up a notch. Must go look through the cabinets now. Love using buttermilk in sugar cookies so I bet these are really soft and good.
