Ingredients:
1 Butternut squash
3/4 cup chopped onions
1 garlic clove (minced)
1 lb. lean ground turkey
1/4 cup chopped parsley
1 box white rice
1 Tbsp. butter
2 8oz. cans of tomato sauce
grated piave cheese
salt and pepper to taste
olive oil
Preparation:
Preheat oven to 350 degrees
Cut butternut squash in half and then in half again for each side; remove seeds
Spread some olive oil over the top and place cut side down on cooking sheet; cook in oven for 45 mins
In medium saucepan cook turkey until no longer pink
Cook rice according to box instructions
Remove meat from pan and make sure that it is in small pieces if not chop it up with a knife
Add onions and butter to the medium sauce pan after 4-5 minutes add the garlic
Now add the turkey and rice and one can of tomato sauce and mix well
Remove the butternut squash filling and mix it with the turkey and rice
Begin to fill each of the shells with the filling and top with tomato sauce
Place back in oven for 15-20 minutes
Remove from oven and sprinkle with piave cheese
