This past weekend I attended my first ever food blogging conference in Orlando, Florida at Disney World. When I have the time to go through all my photos I will tell you all about my fun trip. The plan was to get some of that done yesterday but I came home to a teething baby who is needing some mommy and daddy cuddle time. This was my first full weekend away from Livi and I missed her so much while I was gone. Thankfully I have a TERRIFIC husband who sent me videos and pictures throughout my trip.
Whole Foods in Orlando hosted an excellent brunch for all the food blogging attendees before we all headed back home. This was some of the best food that I have had in a long time. This strawberry caprese baguette was inspired by one of the dishes that we had at Whole Foods. I loved having fresh strawberries paired with the mozzarella instead of the regular cherry tomatoes. This dish can easily be served as an appetizer or as a side dish.
In the middle picture above you will notice a nifty looking gadget. Yes, I totally just said NIFTY. A couple of weeks ago I received an awesome box of OXO fruit gadgets. I used my strawberry huller for this recipe and it definitely helped me out with the strawberries. I was so used to chopping or slicing off the end of the strawberry but having this product just made me realize how much of the actual strawberry was being wasted just to get the leaves off. My strawberry huller is now my new BFF in the cooking world because I can crank out strawberries in no time.

Turn the oven to broil.
Using a kitchen brush spread the olive oil onto the top of the baguette slices.
Place in the oven on a baking sheet for 2 minutes.
In a bowl mix the mozzarella and strawberries. Spoon a little of the mixture onto each baguette slice.
Drizzle the balsamic vinegar onto each slice and then top with basil.

Had such a fun time hanging out this weekend! I’ve always thought the same thing about the waste that goes along with slicing the top of the strawberry off, it makes the little bit of ocd in me kick in. Apparently, I need a strawberry huller!
