It never fails that after lunch my kids become ravenous little human beings. They wake up from their naps starving as if they’ve never seen food before. Then low and behold dinner rolls around and nothing sounds good to them, or they are full. I’m just going to assume that this happens with most families.

I usually oblige to their hunger panes and let them dive into the refrigerator or scour the shelves for food. The fridge is typically stocked with fresh vegetables, fruit, and cheese. The pantry shelves have chips, nuts, and gummies. This past weekend I brought out the chocolate to make them a special treat… S’more Truffle Bites.

I wanted to make it a nice treat that you couldn’t just find on the pantry shelves or in the refrigerator. These truffle bites are great afternoon treats and they are perfect for any upcoming holiday plans. In fact, anything having to do with S’mores are ideal for the summer and the fourth of July.

S'more Truffle Bites

S'more Truffle Bites

Yield: 15 bites

Ingredients

For the Truffles

  • 1/4 cup plus 1 tablespoon cream
  • 8-ounce semi-sweet chocolate baking bar
  • 1/3 cup marshmallow fluff

Ingredients for Assembly

  • 3/4 cup marshmallow fluff
  • 1 15 count package of Athens Mini Fillo Shells
  • 1 tablespoon graham cracker crumbs

Instructions

For the Truffles Add cream and chocolate to a double boiler. Keep stirring over low heat until chocolate has melted.

Pour into a glass bowl and then add in the marshmallow fluff. Using a spoon mix everything together and then place in the fridge for at least an hour.

For the Assembly Lay the mini fillo shells out onto the serving tray. Fill them 3/4 with the marshmallow fluff.

Scoop up the chocolate into round balls with a spoon or small teaspoon size cookie scooper. Place them on top of the marshmallow fluff and then sprinkle graham cracker crumbs on top. Repeat until all of the S'more Truffles have been used.
