After 3 1/2 years of running the blog full time, it’s time for me to seek adventure elsewhere with real people and not just all my social media friends. Yes, I love you all dearly, but I’m missing the day to day interaction with adults. This creative space started out as a hobby and I will continue to update several times a week so you can keep on feeding your family and friends. Now I have others to test out my recipes besides my lovely sous chef Shaun and the rest of the rambunctious gang I call my kids.

Slow Cooker Broccoli and Chicken

Friday is my first day at the new gigs and I wanted to leave you all with a new recipe before I depart for the weekend. This Slow Cooker Broccoli and Chicken is a quick meal that can last all week long. You can keep it simple with just the broccoli and chicken or add some cooked white rice. I chose the later along with some shredded mild cheddar cheese. My family loves broccoli but if you want to substitute it with cauliflower, spinach or carrots I say go for it.

This Slow Cooker Broccoli and Chicken takes 4 hours to make on high and about 6 1/2 hours on the low setting. It’s a great meal to prep on the weekends while you are at the house.

Slow Cooker Broccoli and Chicken

Ingredients

  • 4 chicken breasts
  • 1 large onion, diced
  • 10.5 ounce can cream of chicken
  • 10.5 ounce can cream of mushroom
  • 3 cups frozen broccoli
  • 15 ounce can whole kernel corn, drained
  • salt and pepper to season

Instructions

Place the chicken, onion and both cream soups in the slow cooker on high for 3 1/2 hours. Using two forks start to shred the chicken in the slow cooker. Then add the broccoli, corn along with salt and pepper. Stir and let it cook for an additional 30 minutes.

Serve with rice or a salad.
