Skillet Chicken with Olives and Tomatoes

It’s just plain and simple, we are chicken lovers. Poultry really is our go-to meal especially since Olivia likes to eat it too. There are so many different ways to serve this meat and different cuts to choose from. Chicken breast fillets are what usually show up on our plates. As a kid I would only eat drumsticks but I like that I can now stuff, flatten and roll the chicken breasts. It’s all about elevating the meat.

Since we have moved I go to the grocery store at least twice a week just trying to restock our refrigerator with groceries. It’s all about large quantities and food to entertain family and friends. Just BARE chicken has a new line of products and varieties. They just launched family size chicken packages. This is definitely handy when you have a family of more than four or you just want to have leftovers throughout the week.

We are still trying to get settled into our new home, so leftovers are a plus. I wanted a simple yet fast dish for this family pack of chicken breast fillets. We also have a ton of tomatoes around our house since we all just love them. Olives always go well with chicken and tomatoes, so that was an easy choice for this dish as well.

Skillet Chicken with Olives and Tomatoes

Yield: 6 servings
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes

Ingredients

  • 1 2.25 pound package Just Bare Chicken Breast fillets
  • 1 Tablespoon olive oil
  • Italian herb seasoning
  • Salt and Pepper
  • 1/2 cup sliced black olives
  • 1/2 cup sliced green olives
  • 1 Tablespoon plus 1 teaspoon of capers
  • 2 roma tomatoes, diced

Instructions

Preheat oven to 350 degrees.

Add oil to a large skillet over medium heat. Season both sides of each chicken breasts with italian seasoning, salt and pepper. Place in skillet. Cook for 5 minutes on each side.

Place the skillet in the oven and cook for an additional 10 to 15 minutes or until chicken is cooked through. Remove from oven and add the olives, capers and tomatoes to the pan.

Serve immediately.
