These Samoa Blondie Bars are a twist on my favorite Girl Scout cookies. They are easy to prepare and are perfect for an afternoon treat.

This past Friday I walked into my “new” office building with a special treat for my co-workers. I mean a little sweetness on the first day can go a long way. Occasionally, I will buy a boxed dessert to make at home when we don’t have enough time on our hands to make something from scratch. After looking at the box, I decided to put it back in the pantry and try to create my own dessert.

These Samoa Blondie Bars are easy to make and consists of all your favorite ingredients found in the traditional Girl Scout Samoa cookies. Blondie bars are a lot like a brownie except instead of the dark chocolate color typically found in tradition brownies you will see that omitted in blondies.

After making the main blondie bar, it’s time to add some of your favorite toppings like the caramel bits, coconut flakes and chocolate chip morsels needed for this Samoa Blondie Bar recipe.

I’m hoping that the new co-workers enjoyed these bars, but from the looks of it, I was sent home with an empty container.

Samoa Blondie Bars

Yield: 16 bars

Cook Time: 35 minutes

Total Time: 45 minutes


  • 2 1/4 cups all-purpose flour
  • 1 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, room temperature
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla
  • 3/4 cup caramel bits
  • 1 cup chocolate chip morsels
  • 3/4 cup sweetened coconut flakes
  • fudge or syrup for topping


Preheat oven to 350 degrees.

In a small bowl combine flour, baking powder and salt. In a large mixing bowl with paddle attachment beat the butter and sugar for 2 minutes. Then beat in eggs and vanilla. Stir in the caramel bits, chocolate chip morsels and coconut.

Line a 11X7 baking dish with parchment paper sprayed with non-stick spray. Spread the batter out evenly and bake in the oven for 35 minutes or until toothpick inserted comes out clean. Let it cool for 45 minutes before drizzling with fudge or syrup.
