We have been in our new home for ALMOST a whole month now. I’m still trying to adjust to being a stay at home mom, trying to find time to take photos of the food we eat and bake on the side for my business venture. The stress of everything is finally backing off but it did cause me to gain some weight.

I like to blame it on the baby, but who am I kidding the problem lies with me. Since the move to Lubbock I have put on 6 lbs. That is 6 lbs. in less than a month!!! This past week I decided to make an executive and wise decision to join Weight Watchers again. I did this program back in college and right when I moved to Houston. The program helped me lose more than 60 pounds (years ago) and I’m here to say that I’m back at it again. I don’t have 60 lbs. to lose and I’m not looking to lose that much but I want to be HAPPY in my body.

Does that mean that I will only have super healthy food on A Zesty Bite?

NO WAY!

What I like about WW is that you can eat bad foods occasionally but YOU need to do it in moderation. I will try my best to include Weight Watchers Points in my recipes for those who are on the program.

Now on to this delectable appetizer. It is made with four ingredients and was made in less than 20 minutes. If you like to entertain like I do, then this recipe will impress your next guest as an appetizer.

Salad Prosciutto Cups

Yield: 8 cups
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Ingredients

  • 4 oz. prosciutto
  • 2/3 cup arugula
  • 2 oz. soft goat cheese
  • a couple dashes balsamic vinegar

Instructions

Preheat oven to 350 degrees.

Coat a muffin tin with non-stick spray. Lay one piece of prosciutto into each muffin tin. If the slice comes out of the muffin tin fold it back over so that all pieces are inside. Place in oven for 10 minutes. Let it cool for 5 minutes and then flip tin over to remove.

Place a couple of arugula leaves into each prosciutto cup and then top with a spoonful of goat cheese. Once all cups are made put a couple of dashes of balsamic vinegar on to the top of each piece.

Can be served warm or cold.
