There are some nights where you are just craving something in particular. Well a couple nights ago I was craving pasta. Shaun and I went to the grocery store and found some lovely shrimp to go with the pasta. I was going to add some green peas to the recipe but when I got home I found out that they were lima beans.
ENJOY!
Ingredients:
1/2 lb. rotini noodles, cooked
3 garlic cloves
1/2 cup chicken stock
1/4 cup white wine
1/2 tsp lemon juice
1 small tomato, diced
2 wedges laughing cow cheese garlic and herb
1/3 cup mushrooms, chopped
8 oz. shrimp, deveined
1 Tbsp capers
1 Tbsp olive oil
Preparation:
Cook the pasta according to the box or package that it came inside
Combine the chicken stock and white wine to a medium sauce pan
Simmer the sauce over low-med heat
Add the garlic and cook for 5 minutes
Now add the shrimp and turn after 3-4 minutes, shrimp should be a nice pink color
Remove the pan and add lemon juice, pasta, and cheese
Stir so that the cheese melts evenly, its OK if the cheese is a little clumpy
Add the capers, tomatoes, mushrooms, olive oil and top it off with some salt and pepper
Wonderful, warm and delicious dish…I could eat this everyday hahaha

Never thought about using that cheese as a sauce – what a great idea! Something about shrimp and capers just makes my tummy happy.
