It’s hard to believe how quickly Christmas is approaching especially when I feel like I’ve just recovered from Thanksgiving. I know many of you are already busy prepping or gathering ideas for your upcoming holiday meals. When it comes to my family there must be prime rib, mashed potatoes, buttery hot rolls and of course a salad. This holiday season I’ve teamed up with Pompeian and their Red Wine Vinegar with the “Mother” to make this delicious and festive Rosemary Red Wine Vinaigrette. To stay healthy around the holidays you can do something as simple as trying this vinaigrette. By consuming two tablespoons of red wine vinegar with the mother each day you can improve the digestive system and boost the immune system. It can also help relieve a sore throat and we all know they are more frequent during the cold months.

Thanksgiving wouldn’t be the same without a turkey and ham but for Christmas, I’m all about adding a delicious, juicy red meat to the table. The sides are usually in some healthy form like this mashed cauliflower and adding a fresh salad is another great way to incorporate fruits and vegetables into everybody’s meal. This red wine vinaigrette takes less than 5 minutes to prepare and stores great in the refrigerator for at least 2 weeks so you’ll have plenty to go with any leftovers. But, with a salad around I guarantee you won’t have leftovers after the guests have had a taste.

Rosemary Red Wine Vinaigrette

Instead of the traditional red wine vinaigrette dressing, I decided to incorporate some fresh rosemary into the salad dressing. It gives it a flavor boost and makes it feel more festive during the Christmas season. You can leave the rosemary in the dressing or remove the leaves with a strainer before serving.

Rosemary Red Wine Vinaigrette

Ingredients

  • 1/4 cup Pompeian Red Wine Vinegar
  • 1/2 cup olive oil
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon rosemary leaves
  • pinch of salt

Instructions

Combine all ingredient into a jar and whisk until everything is well combined. Store in refrigerator until ready to use.
