Simplicity. Aren’t we all looking to make life more simple? Yet, we overload ourselves because it becomes a creature of habit. As I try to downsize on some things I’m going to at least feature a simple recipe today. It involves this roasted cabbage with bacon, which uses minimal ingredients yet it is full of flavor.
 
I was going through old blog posts this past weekend and this dish caught my eye. It was time for a blog update and to get it back on your radar with new photos. You might even be looking for a great cabbage dish with St. Patrick’s Day right around the corner.

For this recipe, you will need a head of cabbage, your favorite bacon, balsamic vinegar, salt and pine nuts. The pine nuts are completely optional but this dish gets better with the extra crunch from the bacon and pine nuts. I was even able to get the kids to try out this recipe for dinner. No need to tell them it’s cabbage just tell them to try it out because it involves bacon. I mean what else do you need to say to a kid.

Roasted Cabbage with Bacon

Yield: 8 wedges
Prep Time: 5 minutes
Cook Time: 28 minutes
Total Time: 33 minutes

Ingredients

  • 1 head of cabbage
  • 6 slices of bacon
  • salt to season
  • balsamic vinegar
  • 1 tablespoon pine nuts

Instructions

Preheat oven to 425 degrees F.

Peel off  2-3 of the outer layers of cabbage. Cut in half and then cut in half again and then repeat. You will end up with 8 wedges. Lay some foil on a baking pan and top with the wedges. Sprinkle each cabbage with salt. Chop the bacon and then lay on the top of the cabbage and around it.

Place in the oven for 25 minutes and then remove. Sprinkle the pine nuts onto the foil so that they toast. Place back in oven for 3-5 minutes or until everything is brown. Remove and drizzle each wedge with balsamic vinegar. Plate the wedges with a few pine nuts or chop everything up and place in large bowl.
