Most of you are aware of my mom’s tumor situation. While she was at the hospital she was having stomach issues and we found out that if we limited her sugar and carb intake she felt better. It’s not until you take something away do you realize how much you rely on it.

Since my mom is limited my dad is also cutting back on the sugar and carbs. This is the first time where I have ever seen health conscious stuff in my parents home.

Definitely not a bad thing.

My parents had bought some quinoa to try out and lets just say that my dad was NOT IMPRESSED. I told him that it was a taste that he would have to acquire. So I being the good daughter that I am (uh hum) told him I would come up with some quinoa recipes for them to try out at home.

For some strange reason I was craving omelette’s this past weekend which I never do. Not sure if you are like me but I get frustrated because mine fall apart when I try to close them.

Solution solved. It’s called scrambled. You don’t have to care how perfectly folded the omelet is and you don’t have to worry about the inside exploding out everywhere. I mean come on its basically the same thing anyways. I just don’t have the patience for it quite yet. One day!

I asked on twitter for some recommendations and received quite a few. Please let me know your faves as well.

Many of you are probably unaware that I run marathons every couple of years. Yes, I actually run 26.2 miles in the heat, cold and rain. I have ran the San Diego, Seattle and Las Vegas Marathons. I was signed up to run the New York this last year but being 9 months pregnant and running would not have been a good idea. Being a runner I look up to the people who qualify for the Boston Marathon each year. My prayers go out to all the families affected by this huge tragedy.

I was contacted by Albion Fit to check out there women’s fitness and swimsuit line. I fell in love with their 26.2 teal jacket. This jacket is perfect for hiking, walking or running. One thing that I particularly loved about the jacket is that it has a pocket on the left sleeve for you to store a key or card while working out. That is especially handy for us runners. I personally love to wear comfy clothes when I am at home and I feel like any of their clothes would be perfect for me. Did I mention they are super cute and trendy.

Quinoa Breakfast Scramble

Quinoa Vegetable Scramble

Yield: 2-4 servings
Prep Time: 10 minutes
Total Time: 10 minutes

Ingredients

  • 1/2 cup water
  • 1/4 cup quinoa
  • 1 tsp olive oil
  • 1 cup mushrooms, chopped
  • 1/2 cup asparagus, chopped
  • 1/2 cup bell pepper, chopped
  • 2/3 cup spinach, chopped
  • 1/2 cup sweet tomatoes, cut in half
  • 10 egg whites
  • salt and pepper to taste

Instructions

Add the water to a small pot. Bring to a boil and add the quinoa. Bring back to a boil and then cook on medium for 12 minutes or until water is dissolved. Remove from heat and let it sit for 15 minutes.

In a large sauce pan add the olive oil over medium heat. Add the mushrooms, asparagus, bell pepper and spinach. Saute for 10 minutes.
Push the vegetables to one side of the pan and add the egg whites.
Cook the egg whites and scramble them with a spatula.
Mix the eggs with the vegetables and add the tomatoes. Season with salt and pepper.
Spoon the quinoa into egg and vegetable mixture. (You may not use all the quinoa.)
Serve while warm.
