Prosciutto wrapped Asparagus

(This is another OLD RECIPE that I brought back to share and update the photos. I even added it in the recipe box for easy saving and printing. This was my 2nd recipe that I ever made for A Zesty Bite. Hope you enjoy this prosciutto wrapped asparagus as it is an old favorite recipe.)

Tonight, I decided to make a side dish to go with the left over salmon. I made prosciutto wrapped asparagus my way. There are a ton of recipes out there for this dish that include all different types of ingredients. I decided to add a cheese spread to the prosciutto to add some more zest.

You can use any type of cheese or spread that appeals to your particular tastes. The brand that I chose was the laughing cow cheese spread (garlic and herb) that comes in small triangle packages. Another suggestion I have is to use the salt sparingly because the prosciutto is naturally salty.

Prosciutto wrapped Asparagus

Prosciutto wrapped Asparagus

Yield: 3-4 servings
Prep Time: 5 minutes
Cook Time: 11 minutes
Total Time: 16 minutes

Ingredients

  • 1 bundle of Asparagus
  • 6-7 slices of Prosciutto
  • 2 Laughing Cow Cheese Spreads
  • 1/4 cup Parmesan cheese, grated
  • Extra Virgin Olive Oil to drizzle
  • Cooking Spray
  • salt and pepper to taste

Instructions

Preheat oven to 400 degrees.

Lay out a slice of the proscuitto and spread a little of the cheese onto one side. Roll up 4 asparagus stalks and place on a baking sheet sprayed with cooking spray. Repeat with the rest of the proscuitto and asparagus. Drizzle with olive oil.

Place in oven to cook for 7 minutes. Remove and top with grated parmesan cheese. Place back in the oven for an additional 4 minutes.
