I have been wanting to make hummus for quite some time. At work I have been making a lettuce sandwich wrap with a hummus spread. By now I have grown tired of buying the hummus each week, so I decided to make it on my own. I was surprised at how short the whole process took to make the dip which was about 10 minutes. ENJOY!
Ingredients:
1 15oz. can chick peas (drained but reserve the juice)
3 Tbsp lemon juice
1 garlic clove
1 1/2 Tbsp Tahini
1/2 ts. salt
1/4 tsp paprika
1/4 cup chick pea juice
olive oil
1 Tbsp pine nuts, toasted
1/2 Tbsp roasted bell pepper, chopped (can find it in a jar at your local grocery store)
Preparation:
Combine all ingredients into food processor and mix until all is creamy (3-5 minutes)
Move the hummus to a serving bowl and make little hole in the middle and place a little bit of olive oil in the center
Top off the hummus with pine nuts and bell pepper
