When I lay my daughter down to sleep, we have our usual “chit-chat” time. We discuss things that have happened throughout the day or our future dreams. A few nights ago, she mentioned she wanted her own cupcake bakery. My job is to help her develop and taste test all recipes that are included in her “Olivia’s Bake Shop”. She will focus on cupcakes, cakes, cookies and she agreed to my addition of a candy store with it. The only thing is that we need to start taste-testing recipes because baking is a pleasure of mine but not something I do on a daily basis.

Coconut Bites

Until we start baking cupcakes, I will stick to the easy recipes like these Peanut Butter Coconut Bites. A co-worker of mine wanted me to mimic some energy bites from the restaurant chain Freshii. After two batches of these Peanut Butter Coconut Bites, I think I’ve come close to the original energy bites. They are not covered in coconut, but feel free to roll them if you want more of the Freshii look.

Yesterday was the day that my co-workers got to try them out. It’s always a good sign when you come home with an empty bowl. It looks like I will continue to win them over with goodies from A Zesty Bite.

Peanut Butter Coconut Bites

Peanut Butter Coconut Bites

Yield: 18+ bites

Ingredients

  • 3/4 cup peanut butter
  • 1/2 cup mini chocolate chip morsels
  • 1 teaspoon vanilla
  • 1 1/4 cup old fashioned oats
  • 2 tablespoons honey
  • 1 cup sweetened coconut flakes

Instructions

  1. In a bowl combine all of the ingredients.
  2. Using a 1-inch scoop create small balls and lay them on a baking sheet.
  3. Repeat until all bites are created.
  4. Place in refrigerator until ready to eat.
