Pan-Toasted Gnocchi with Bacon, Leeks and Fresh Tomato

Man it has been forever since I have done a Tried & True Post.  I took to my Pinterest board for Delicious Food and found Laurie from Simply Scratch’s recipe for this delicious gnocchi.

I’ve been wanting to make homemade gnocchi for a long time but I decided I’ve never made it period.  What better way to start it off with the easy route and then make it homemade.  Laurie’s recipe literally took me about 15 minutes to make.  15 minutes people!!!!!  Not to mention that everyone enjoyed the meal including Olivia.

After I let Laurie know that our family thoroughly enjoyed our quick dinner, I asked her to answer some short fun questions for my viewers.

What is your favorite meal?
Oooh! Smoked pulled pork on cheesy grits with a simple salad and glass of red wine. Deliciously filling.

What is your favorite beverage?
Unsweetened iced tea with lemon.

Tell me a random fact about yourself.
I once was dared to eat a tablespoon of cinnamon. I did and survived. Unfortunately there’s video to prove it.

What do you like most about having a blog?
Not to be completely obvious, but I love it all. From recipe developing, cooking and photography to the photo editing and writing. I really can’t imagine doing anything else.

Savory or sweet?
Definitely savory.

If you could cook for a celebrity, who would that be?
Debi Mazar and Gabriele Corcos. I’m obsessed with their show {Extra Virgin}, they’re so down to earth and they love their wine!

    My husband makes the gnocchi in our house and it is one of our favorite dishes. This version looks out of this world! Can’t go wrong with bacon!
