While everyone is contemplating on their New Year’s Resolutions I am making a batch of cookies.

January is the time of year where the gyms fill back up and everyone is back trying to get their slim figure. I am usually a part of that crowd but this upcoming year weight loss is not my top priority. I am making my New Year’s resolution to spend more time with family!

That doesn’t mean I won’t work out or try to get back to my pre-pregnancy weight but it’s just not one of my top priorities.

I’ve always been a big fan of monster cookies but had never made them before. These cookies have anything and everything in them. You can even add more of your personal toppings if you want. Instead of using peanut butter I decided to step outside the norm and use nutella.

Great substitution in my book!

Monster Cookies

Cook Time: 8 minutes
Total Time: 8 minutes

Ingredients

  • 2 extra large eggs
  • 1 1/4 cups light brown sugar
  • 1 cup sugar
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 1/4 cup nutella
  • 1/2 tsp instant espresso coffee granules
  • 3/4 cup flour
  • 2 tsp baking soda
  • 1 stick butter, softened
  • 3/4 cup M&M’s
  • 3/4 cup chocolate chip morsels
  • 1/2 cup pecans, chopped
  • 3 1/2 cups oatmeal

Instructions

Preheat oven to 350 degrees.

In a mixing bowl whisk the eggs and sugars until creamy about 3 minutes. Add the salt, vanilla extract, nutella, instant espresso, flour, baking soda and butter. Using a spoon stir the ingredients until it is well mixed.

Stir in the m&m’s, chocolate chip morsels, pecans and oatmeal.

Using a cookie scoop or spoon drop tablespoon size drops onto a silicone mat or cookie sheet.

Bake for 8 minutes and then remove to let cool for 2 minutes on pan. Then remove with spatula to wire rack to finishing cooling.

*Cookies will be thinner than normal just be sure to not over bake.*
