Every day when the kids enter the house you hear the same words come out of their mouth. “I’m hungry and I want something to eat now.” I usually respond with the words, “I’m going to make dinner soon, so you will have to wait.” Do you honestly think my kids wait?

No.

Mediterranean Hummus Celery Sticks

To allow for healthy snacking before dinnertime, I make sure that the fridge is stocked with fresh fruit, vegetables, and cheese. That’s my guilt free way of letting them snack before we sit down for the main meal. This past weekend I stepped up their snack game by making these easy Mediterranean Hummus Celery Sticks. You remember ants on a log? It’s somewhat the same concept, but instead I added hummus to the celery sticks and topped it off with fresh vegetables. These sticks are easy to put together and would be great as an appetizer for a party or gathering. If your kids don’t like the additional toppings just skip them and just let them eat the celery with the hummus.

Mediterranean Hummus Celery Sticks

For the hummus, I used my personal favorite which is Roasted Pine Nut Hummus. However, you can substitute this recipe with your favorite hummus choice.

Mediterranean Hummus Celery Sticks

Mediterranean Hummus Celery Sticks

Yield: 16+ celery sticks

Ingredients

  • 1/4 cup chopped red onion
  • 1/2 cup chopped red bell pepper
  • 1/4 cup mixed chopped olives
  • 1 10-ounce container of Sabra Roasted Pine Nut Hummus
  • 8 celery stalks, cut in half

Instructions

Add onion, bell pepper and olives to a mixing bowl. Spoon hummus into a piping bag or a ziploc bag. Pipe into the center of the celery sticks. Top it off with a spoonful of the vegetable mixture.

*If serving at a party use toothpicks on either side to keep celery sticks upright.
