I first heard of mashed butter beans just a couple of months ago. My mom was just released from the hospital and my sister was at their home making them meals. I spoke with my dad one night and he mentioned how he loved mashed butter beans. The food blogger in the family had never heard of such a thing. Once again my sister had won in developing tasty food recipes. Not only was she at their home preparing meals but my dad was actually liking her healthy food options.

Fast forward a couple of months, I have completely forgotten about this dish. We load up our vehicle and go visit them for the weekend. She already made tasty chile relleno rustico and now she had made mashed butter beans. It was TIME for me to finally try these infamous mashed butter beans. Not only did I eat them all off my plate but Olivia devoured a couple of spoonfuls too. She actually ate my sisters food and didn’t spit it out like she did on my pureed carrots and green beans. The best thing about this side dish is that it can be made in 10 minutes or less. You no longer have to wait for potatoes to boil to enjoy this tasty dish.

Mashed Butter Beans

Mashed Butter Beans

Yield: 2-4 servings
Prep Time: 5 minutes
Cook Time: 5 minutes
Additional Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • 3 cups water
  • 2 16oz. cans large butter beans
  • 1/4 cup plus extra 1 Tbsp heavy whipping cream
  • 3 Tbsp cheddar cheese, shredded
  • salt and pepper

Instructions

Bring the water to a boil in a medium size pot. Rinse and drain the butter beans and add them to the boiling water. Cook for 5 minutes.

Drain the water and add the beans to a food processor. Add the cream and cheese to the processor. Blend until it reaches a smooth consistency and then season with salt and pepper.

*You may substitute the cream with milk*
