How many of you actually know your neighbors? The type of neighbor that you can borrow sugar from, trust to watch your home or pets? We have lived in many different neighborhoods and I can’t stress how important it is to know the people that surround your house. Especially if you have little ones, pets or travel a lot its nice to have someone to look after your house and your safety.

I was super excited and happy to participate in Kettle Chips #heyneighbor campaign this summer. It’s all about getting to know your neighbors by having get togethers or going to greet and meet the people next door.

At the beginning of May I decided to put together a neighborhood block party for our whole street. We had about 25 people in all and it definitely involved some good food brought by everyone who attended. We kept it simple with hamburgers, hotdogs, appetizers, chips and a plethora of drinks. All of us were able to chat the night away and exchange phone numbers for future reference. The best part is when we go on a family walk its nice to stop and talk to your neighbors who you now know.

When we leave town we now ask our neighbors to take care of our dogs and they do the same. This weekend our next door neighbor was leaving town to celebrate her birthday and we were asked to watch the dog and cat. I went over to the house to get the keys and surprised her with a bag of kettle chips for her trip.

I also received my own bag of kettle chips for recipe development. For the next neighborhood party I plan on impressing my  neighbors with this lobster mac and cheese dish. It’s easy to make and so fun with the chunk of lobster and crushed chips on top.

Lobster mac and cheese

Yield: 6-8 servings

Prep Time: 20 minutes

Cook Time: 16 minutes

Total Time: 36 minutes

Ingredients

• 3 tablespoons unsalted butter, divided
• 1/2 cup diced red bell pepper
• 1/4 cup diced celery
• 1/2 cup diced sweet onion
• 2 cups mini farfalle
• 2 tablespoons flour
• 1 cup whole milk
• 1/3 cup cream cheese
• 1/4 teaspoon paprika
• 1/4 cup whipping cream
• 1/2 teaspoon salt
• 1/4 cup parmesan cheese
• 1/3 cup shredded cheddar cheese
• 10 ounce steamed lobster tail, cut into chunks
• 2 cups real sliced potatoes with olive oil Kettle chips, crushed

Instructions

1. Preheat oven to 350 degrees F.
2. In a saute pan over medium heat melt 1 tablespoon butter and add red bell pepper, celery and onion.  Cook for 8 minutes or until softened.
3. Bring a pot to boil and add farfalle noodles.  Cook until tender about 8 minutes and then drain.
4. While noodles are cooking heat a large sauté pan over medium low/medium heat.  Melt 2 tablespoons butter and whisk in the flour.
5. Slowly stir in the milk and whisk for 4 minutes.  Stir in the cream cheese, paprika, whipping cream, salt, parmesan cheese and cheddar cheese.
6. Keep stirring until cheese has melted and then add noodles and vegetables.
7. Pour into 8 ramekins or 8 X 11 inch casserole dish.
8. Stir in the lobster chunks and place a couple on top of the dish.
9. Top with kettle chips and bake in oven for 15 minutes and then broil for 1 minute.
