Loaded Spinach Salad

There is no denying that I have a LOVE for Panera Bread. We have one so close to our house and by my work it’s not hard to stop by for a quick lunch or dinner. This past week I went two days in a row for lunch after I visited Olivia at school. When I go I usually try out different combinations from their pick two list. They have a new salad out that is called the Spinach Power Salad. I decided to go astray and pick this salad with soup instead of my usual soup and sandwich combo.

This salad is loaded with spinach, diced egg, bacon, crispy onions, mushrooms followed by a vinaigrette dressing. Now you know why I called mine the “Loaded Spinach Salad.”

Not only did I eat this salad for lunch but I made it again for dinner. I would honestly eat this salad all the time but my patience wears thin waiting for the egg and bacon to get done. You can buy hard boiled eggs in a package at the grocery store but honestly I am kind of weirded out by buying them in a package (not fresh). I’m not even a huge egg fan but I love them on my salads for some strange reason.

Instructions

In a medium size bowl combine all of the ingredients listed and toss with two spoons.
