Loaded Potato Soup – Cooking Light

Ingredients:
4 red potatoes
2 tsp olive oil
1/2 cup onion, chopped
1 1/4 low sodium chicken broth
3 Tbsp flour
2 cups milk
1/4 cup light sour cream
1/2 tsp salt
1/4 tsp black pepper
4 bacon slices, chopped
1/3 cup shredded cheese
2 Tbsp sliced green onions

Preparation:
Pierce the potatoes and place them on a microwavable plate for 13-15 minutes or until tender
Place olive oil in saucepan over medium-high heat and add onions; saute for 3 minutes
Add broth, milk, and flour to the saucepan
Stir and bring to a boil
Remove from heat and add the sour cream
Stir until melted
Add salt and pepperĀ to taste
In medium pan cook bacon until crispy; and crumble
When potatoes are done remove some of the skin (its up to you, personally I prefer it)
Add potatoes to bowl and top with cheese, bacon, and green onions

    Potato soup makes January bearable, and yours looks phenomenal. I’ll have to try making it with sour cream; I usually develop the body in mine with cream cheese!
