Valentine’s Day is right around the corner. I feel like I have been staring at Valentine’s Day stuff just a few days after Christmas ended. Next thing we know we will be buying Christmas decor and gifts starting in the Summer. Valentine’s Day is definitely a hit or miss with people. You either enjoy this holiday or loathe it. I in fact have always enjoyed it. My favorite memories are from my childhood when you would create a bag to put on your desk so that everyone could fill it with Valentine’s Day Cards and candy. The best was when someone would give me a red sucker that had white lettering on it and if you stuck it on your tongue the letters would show up when you removed the sucker.

I view this day as spending it with people you love and letting them know how much they mean to you. It doesn’t mean you have to have a significant other to enjoy it!

Heart Cupcakes

For the past couple of months we have had lots of cookies around our house. I finally decided to make a change and bake some cupcakes. I found a photo on Pinterest that inspired these cupcakes. Who doesn’t love a good cupcake with a heart inside!

You can make the heart cupcakes with any color heart you want but I decided to go with pink to stick with the Valentine’s Day theme.

Yield: 24 cupcakes
Cook Time: 18 minutes

Instructions

For the Heart Cutouts
Preheat oven to 350 degrees.
In a large bowl add all of the ingredients and beat with a hand held mixer for 2 minutes.
Pour into a greased 9X13 baking dish and cook for 20 minutes. Remove from oven and let it cool for 45 minutes.
Place in the refrigerator for 4 hours and then remove. Spray a parchment sheet with baking spray and flip the baking dish over so the cake falls out. (You may need to beat the back a couple of times to remove the cake)
Using a heart cutout start pushing it down slowly into the partially baked cake and remove the cake from the cutout and set it aside. Repeat until the whole cake has been used to make hearts.

For the Cupcakes
Preheat oven to 350 degrees.
In a large bowl add all of the ingredients and beat with a hand held mixer for 2 minutes.
Line a pan with cupcake liners and place one heart into each liner. (It’s up to you if you want the cupcake facing up or through the side when you bite into it)
Pour the batter over the heart just enough to cover the heart cutout.
Place in the oven for 18 minutes.
Remove the cupcakes from the pan and cover with icing and sprinkles.
