Hatch Chile Cornbread Waffles

We love breakfast in our household. The whole she-bang of eggs, bacon/sausage, hash browns, toast/waffles/pancakes and then top it all off with a fruit plate. The other morning we got out the waffle maker to whip up a quick batch of homemade waffles. It got me thinking if you could make other batters in the maker. I had already made a waffle sandwich but what about cornbread?

Two weeks ago we received a shipment of hatch green chiles out of New Mexico. We absolutely love these chiles and WE couldn’t wait to get our hands on them. This past year we made Hatch Chile Cheese Bread and this year I wanted to spruce it up by making some really delicious cornbread. It wouldn’t just be any type of cornbread made in a skillet or a muffin pan, this was going to be made in my waffle maker. Thats right cornbread with hatch chiles and cheese in the batter made in the waffle maker in less than 5 minutes.

I also made a quick turkey chili to have on top of the warm waffles. It was a great pairing and I definitely will be trying out other soups for these waffles. If you don’t want your soup on top of the waffles just place it in the bowl like usual and dip the waffle into the bowl.

Hatch Chile Cornbread Waffles

Hatch Chile Cornbread Waffles

Yield: 5-6 waffles
Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 7 minutes

Ingredients

  • 1 cup of corn meal
  • 1 cup flour
  • 1 Tablespoon baking powder
  • 1/2 cup sugar
  • 1 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 3 Tablespoons unsalted butter, melted
  • 1 cup grated cheddar cheese
  • 1/2 cup chopped hatch green chiles

Instructions

Place all ingredients into a large bowl and whisk until everything is coated.

Heat the waffle maker and coat with non-stick spray. Place batter into the maker and cook on medium/high heat if there are settings.

Repeat with the rest of the batter.
