Grilled pineapple and strawberries with bourbon white chocolate glaze

Pop open a beer, grab a lawn chair and get ready to be outside with the start of summer. Well, technically this has been me for the past couple of weeks but who is counting. When spring and summer roll around you can bet that we are using the grill at least one a week if not more. Everyone is used to the usual burgers, ribs, vegetables and chicken but it was about 3 years ago when I got into grilling fruit. Peaches, raspberries, strawberries, mangos and pineapple are among my favorite picks from the fruit selection.

This past week I was by myself trying to get some things done around the house sans the toddler and hubby. I cranked up the grill and decided to grill a burger but I wanted something sweet to go with it. Grilled pineapple and strawberry skewers with bourbon white chocolate glaze was created right then and there and was the perfect addition to my burger. OK maybe the two don’t really go hand in hand like peanut butter and jelly, but it worked for me in that moment.

I was delighted (get it) to work with International Delight again on some fun new monthly recipes for you for the rest of 2014. When I was grilling these fruit skewers I wanted something to go with them to amplify the sweetness but possibly get in my chocolate fix as well. You may be asking where the bourbon came from but I just happened to make a bourbon burger and decided what the heck.

International delight comes in a ton of different flavors but my personal favorites are caramel macchiato, french vanilla, white chocolate mocha (used for this recipe) and pretty much all the cold stone varieties. You could say that I’m an ID snob when it comes to my creamer and I love adding it to my recipes.

Grilled pineapple and strawberries

Grilled pineapple and strawberries skewers with bourbon white chocolate glaze

Yield: 6-8 skewers
Prep Time: 5 minutes
Cook Time: 4 minutes
Total Time: 9 minutes

Ingredients

  • 1 pineapple, cut into large chunks
  • 8 large strawberries, cut into 3 pieces
  • 1/2 cup powdered sugar
  • 3 tablespoons International Delight white chocolate mocha creamer
  • 1 tablespoon bourbon

Instructions

  1. Preheat the grill to 400 degrees F.
  2. Alternate the fruit and put 4-5 pieces on each skewer.
  3. Place the skewers on the grill and turn after 2-3 minutes.  Cook for an additional 2 minutes and then remove from grill.

For the glaze

  1. Place all ingredients into a bowl.
  2. Whisk until smooth.
  3. Using a piping bag or spoon drizzle the glaze over the warm grilled fruit skewers.
