Green Chile Pork Taco

Here’s a quick and tasty taco that just melts in your mouth. I had some pork in the fridge that I needed to use, but I wanted to do something different than the usual grilled pork loin. For some reason tacos came to mind. I looked in the pantry and found all the necessary ingredients to combine to make a great tasting meal. And what do you know, Meagan even bought corn tortillas the other day. I’m normally one to use a recipe, but it’s so simple you can’t mess it up. ENJOY!!!

Green Chile Pork Taco

Instructions

Preheat oven to 300 degrees
Heat dutch oven over medium high heat with 1 tablespoon of olive oil
Brown pork loin until all sides are browned then remove from pan
Add rest of olive oil and saute onions until soft
Mix in cilantro, pork loin, chiles, tomatoes, seasoning and water
Bring the pot to a simmer for 5 minutes
Place lid on dutch oven and place in oven
Cook for 1 hour 45 minutes
Once done, pull apart the pork with a fork and place on tortilla
Add avocado or any other toppings you like
