A nice juicy burger is one of my top meal choices due to the endless amounts of options available whether its the meat you use or how you finish it off. On top of that they are quick and easy and that is the name of the game in our house during the week. Our little sweet pea Olivia occupies a good portion of our time and now that Meagan’s back to work, our time has become even more valuable. It seems like there is never enough time in the evenings to hang out with Meagan and Olivia….the time just flies and before you know it, it’s bed time. So less time in the kitchen means more time with my two lovely ladies. There is also one thing I’ve learned as a new parent that is quite simple, when Olivia sleeps we sleep! Talk about a short night by the time I get home from work.

Now back to that burger. Like I mentioned, there are endless options for a burger and this one just happens to use bison with muenster cheese and green chiles. It seems like in the past couple of years, green chiles have become a staple in my family. My Dad typically buys a couple 15lb bags of green chiles from New Mexico then he roasts and freezes them for us. Unfortunately we ran out of these so we had to use a can of chiles instead which is still a good topping, just not quite as good as fresh roasted chiles. I can say this much, a cooler will definitely accompany us on our next trip to Lubbock. It might be wise if my Dad puts a lock on his freezer before we arrive. We ate the delicious burgers with rosemary waffle fries!

Yield: 2 burgers

Instructions

Start by putting the meat, worcestershire sauce and the next four dry ingredients into a mixing bowl and then use your hands to thoroughly mix it up.
Warm a skillet over medium heat with olive oil.
Form two patties with your hands. Be sure to put a thumb print in the center to keep the patty from shrinking while it cooks.
Cook burgers for approximately 15-20 minutes depending on desired doneness, flipping half way through.
While burgers are cooking, slice green chiles into long strips and set aside.
Once burgers are almost done, toss in the green chiles and sauté.
Lastly, place the cheese on top of each burger right before you pull them off the skillet so it melts.
