Fried Avocado Tacos

Tacos….. oh how I love thee.  When I’m at a restaurant I rarely, and I mean rarely, skip out on meat selections.  I could probably count on one hand where I’ve actually chosen vegetarian options over something with meat.  What can I say I like my meat.

There is one restaurant that will always have me ordering at least one of these vegetarian meals and its Austin’s famous Torchy’s Taco restaurant.  Low and behold Lubbock, TX put one in near Tech’s campus and it stays packed.  I was going to go test it out but the line is always out the door and around the block.  Momma doesn’t have time for a line like that, so I decided to make my own torchy’s tacos at home.  Needless to say I was bit apprehensive about battering and frying avocados but darn they were good.  I try not to fry a lot in our home but these avocados would not have received the proper love if they were baked.

Just don’t do it…. these babies need to be fried.     

My husband (also a meat eater) loved these fried avocado tacos.  They were quite simple to prepare and we will definitely be munching on these bad boys again.

    I thought avocado couldn’t get any more delicious…and then you went and fried it…YUM!! These look so good!

    Fried avocado?! Wow, this looks super tasty! I’m impressed that this satisfies even big meat eaters (I myself am not, but I occasionally cook for some people who are) – sounds like I’ll have to give it a go!
