This last month I signed up for The Secret Recipe Club and today is reveal day!
 My assigned blog for the month is Veggie Grettie.  Gretchen is a certified nutritional specialist and she offers a great website if you are looking for tips on nutrition or vegetarian recipes.
While looking through her blog I stumbled upon a recipe called Fideua.  I decided to make some minor changes to the recipe.  Fideua is like paella except with angel hair pasta.  I love paella so I knew that this was going to be a great dish to make.  Well, I decided to change up the angel hair to elbow noodles.  I also decided to change up the soy chorizo to lean ground beef as well as having beef broth instead of vegetable broth.  The vegetables in this dish compliment each other very well.  When you get a chance go check out this great site Veggie Grettie!

Elbow Noodle Fideua
Adapted from Veggie Grettie

Ingredients:
2 Tbsp olive oil
4 oz. elbow noodles
3/4 cup onion, chopped
1 cup mushrooms, sliced
8 oz. lean ground beef
1/2 red bell pepper, cut into chunks
2 Tbsp fresh parsley, chopped
1 garlic clove, minced
1/2 tsp paprika
4 oz. tomato sauce
1 cup beef broth
4 oz. fresh asparagus, chopped into 1 inch pieces
1/2 cup water
salt and pepper to taste

Preparation:
Heat 1 Tbsp of oil in wok or large skillet pan on medium heat
Add the noodles and stir constantly for 3-4 minutes
Transfer the noodles to a paper towel to allow them to dry
Add the remaining olive oil to the pan along with the onions
Cook for 4 minutes and then add mushrooms, bell pepper, beef, parsley, garlic and paprika
Cook for additional 7 minutes and stir occasionally
Then add in the tomato sauce along with noodles, broth and water
Season with salt and pepper
Simmer over low/medium heat for 5 minutes and add asparagus
Cover the wok or skillet and simmer for an additional 20 minutes or until pasta is cooked; stir frequently
Preheat oven to broil
Place the mixture into a 9 inch round cake pan and place in oven for 3-4 minutes
Do not let it burn you just want the top crisp
Take out and serve immediately
