I have not made a cookie in forever. OK, actually its been about a month or two, but for me that is a long time.
Today I am bringing the cookies back with this delicious dulce de leche sugar cookie! It was almost too easy to make and the flavor on this cookie is spot on with the chocolate and dulce de leche. I cut them into triangle pieces so I wouldn’t fill so bad about devouring a whole square by myself. Which in fact I did numerous times. I had to make sure that they tasted good since I was going to be sending them off for this month’s Leftover’s Club. I doubt any of you could send something off this good without at least trying it out first. At least that’s what I am going to keep telling myself.
I received some amazing salted caramel shortbread bars from Joanne at Eats Well With Others!

Dulce de Leche Sugar Cookies
Yield: 36 triangles
1 package Betty Crocker Sugar Cookie Mix
1 13.4oz. Nestle Dulce de Leche container
1 1/2 cups white chocolate chips
1/4 cup heavy cream
Preheat the oven to 350 degrees.
In a bowl combine the sugar cookie mix with the rest of the ingredients on the back of the package.
Place a spoonful of the mix into each square tin. Using your fingers spread out the mixture so that it covers the bottom of the square. Put it on the oven and cook for 7-9 minutes.
Remove and let it cool for 10 minutes.
Place a spoonful of the dulce de leche onto each square piece. Spread out the sauce to cover the top.
In a small sauce pan heat the cream and chocolate chips over low heat. Constantly stir the mixture until it is melted.
Spoon a little over each square piece and let the chocolate settle.
After chocolate has settled remove the square piece and cut in a triangle formation.
